BALUSHAHI

INGREDIENTS:
Refined flour 250 g (1½ cup)
Hung curd 160 g (½ cup)
Sugar 2 tbsp
Baking powder 2 tbsp
Cardamom powder ¼ tbsp
Ghee (solid) 2 tbsp
Chopped pistachios 15nos

FOR THE SUGAR COATING:
Sugar 300 g (1¼ cup)
Water ½ cup
Cardamom powder ½ tsp

  1. To a big bowl, add refined flour, curd, baking powder, sugar, cardamom
    powder and ghee and knead to make a soft dough.
    Set aside to proof for one hour.
  2. Make small 12 balls of the dough and make a thumb impression on the centre.
    Deep fry in either ghee or oil on a low flame until golden.
  3. Heat a pan on a low flame, add water and sugar and boil until the
    sugar dissolves and reaches one thread
    consistency. Remove it from the heat.
  4. Soak each fried ball in the sugar syrup for 20 minutes to coat it completely.
    Move to a platter, and garnish with pistachios.
